Summer Peer Support nights in Mira

We would love for you to join us for our monthly Peer Support night out at our Mira location during the months of July and August. As per usual, we’ll have a meal, chats, and have a chance to play some of our fun, nostalgic games we have set up.

If you need some directions, give us a call or let us know next time you’re in the office!

Gratitude & thanks: our grand opening in Mira was a massive success!

Last month we officially opened our door to our newest location on the Mira River!

We couldn’t have done it without the hard work of our team members. They helped make all of the delicious food you enjoyed, decorated the space, and had been organizing and planning behind the scenes for weeks.

Morgan Toney & Keith Mullins had our toes tapping with fabulous music!

Seaside Sugar’s was the perfect sweet treat & we appreciate you so much!

Capers Bouncy Rentals brought the fun with the bouncy tent and 360 selfie station.

Thank you, thank you, thank you to everyone who came out, brought their families & their fur babies! We can’t wait to host many more VFH events in this beautiful location.

Have a look at some photos from the day:

If you’ve been in our clinic, you know Andrea! She graciously makes lunch on Tuesdays and offers it to anyone who walks through our doors that day.

We thought it would be fun to share some of Andrea’s favorite (current and all-time) recipes with you all. This month, she has chosen to share “the best eggrolls ever!”.

Ingredients

Filling

  • 1 lb ground pork or chicken

  • 2 cups shredded green cabbage

  • 1 cup shredded carrots

  • ½ cup finely chopped green onions

  • 2 cloves garlic, minced

  • 1 teaspoon freshly grated ginger

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sesame oil

  • ½ teaspoon white pepper

  • ½ teaspoon sugar

  • 1 tablespoon cornstarch

For Rolling

  • 12 –14 egg roll wrappers

  • 1 egg + 1 tablespoon water for sealing

For Frying

  • 3 – 4 cups vegetable or peanut oil

Instructions

Cook the Filling

  • Heat a large skillet over medium-high heat. Add the ground meat and cook until browned, breaking it into small pieces. Add garlic and ginger; cook 30 seconds.

Add Vegetables & Seasoning

  • Stir in cabbage, carrots, and green onions. Cook until vegetables soften and moisture evaporates (about 4–5 minutes).

  • Add soy sauce, oyster sauce, sesame oil, sugar, white pepper, and cornstarch. Stir well. Remove from heat and let cool completely.

Roll the Egg Rolls

  • Place one wrapper on a flat surface in a diamond shape.

  • Spoon 2–3 tablespoons filling near the bottom corner.

  • Fold bottom corner over filling, fold in both side, then roll tightly upward.

  • Seal the top edge using egg wash.

  • Repeat until finished.

Fry

  • Heat oil to 350°F (175°C).

  • Fry 3–4 rolls at a time for 3–4 minutes, turning occasionally, until golden brown.

  • Transfer to paper towels to drain.

Serve

  • Serve hot with sweet chili sauce or soy sauce.
